Raw Brownie Bites

These Brownie Bites are gluten-free and sugar-free.  Stevia or Xylitol do not affect glycemic sugar levels and are not toxic to our bodies like Aspartame, Sucralose, and many other artificial sweeteners.

Ingredients:

1 cup walnuts or pecans (measure first; then chop fine)

10 pitted dates, (chopped fine and then soaked for a few minutes in enough water to cover them)

Stevia or Xylitol to taste (maybe try 15 drops liquid stevia, or 2 Tbsp powdered stevia or xylitol), or honey could be substituted as well

3/4 cup unsweetened cocoa powder

4 Tbsp coconut oil (or ghee), melted

1/8-1/4 cup shredded coconut (unsweetened)


Method:

1. Add all ingredients together in a mixing bowl and mix with a sturdy spoon.

2. If the mixture is too thick, add a bit more water.  If it seems too thin, add a bit more cocoa powder.

3. Taste to see if more sweetener needs to be added.

4. Shape into one inch balls.

5. If desired, roll the balls in more shredded coconut or cocoa powder, to make them look nice.

6. Refrigerate until serving time.
